今回も、無理しない【 低 FODMAPごはん 】を紹介します。

今回の 低 FODMAPごはんは、朝食シリーズ【 雑炊 】です。

朝飯や病気の時にピッタリ!

高 FODMAP食材を使わない、過敏性腸症候群の安心ごはん(^^)/

やっぱり雑炊の味の決め手は「だし」かな~。

では、温かいご飯から作るレシピ & 生のお米から作るレシピ をどうぞ!

Low-FODMAP朝食シリーズ【 雑炊 】

1. 温ごはんから雑炊を作る (一人前)


材料

〇 温ごはん お茶碗軽く1杯
・・・サラサラ雑炊にしたい場合は、調理前に洗っても良い。
〇 玉子    1個
かつおだし    150ml
〇 しょう油  小さじ 1/3~2/3 程度 (または、鮎魚醤を使用)
○ 塩     適量


※  お好みトッピング

・「かつお節粉」または「かつお節」 適量
・海苔
・青ネギ
・ごま
・漬け物
・パルメザンチーズ


作り方

1.お水を鍋に入れ、火を付けつける。
2.お湯が沸騰してきたら、温かいご飯を入れる。
3.しょう油(または鮎魚醤) 小さじ1/3~2/3程度入れる。
4.あれば、かつお節粉かかつお節も入れる。
5.塩で味を整える。
6.玉子を溶き入れ、固まったら火を止める。
7.お好みでトッピングをのせてお召し上がりください。

感想

・一回ご飯を洗っておくと、サラサラ系の雑炊になります。
・鮎魚醤とかつお節粉でだしも簡単。
・漬物を一緒に摂ると味に変化でます。
・個人的には、甘酢で漬けたような漬け物の方が合うと思います。
・忙しい朝や体調が良くない時、軽くサッと食べたい時にもピッタリです。


鮎魚醤について

※原材料は鮎と塩だけ。匂いもほとんどなく、美味しくて安心です。

次に、お米から雑炊を作るレシピです ⇩

2. お米から雑炊を作る(一人前)


材料

〇 お米      50g
〇 玉子      1個
かつおだし  300ml程度
〇 しょう油    小さじ 1/3~2/3 程度
○ 塩       適量
○ 食用油     適量


※  お好みトッピング

・「かつお節粉」または「かつお節」 適量
・海苔
・青ネギ
・ごま
・漬け物
・パルメザンチーズ


作り方

1.お米を軽く洗い、水分を切る。
2.フライパンか鍋に油を入れ、を炒める。
3.お米に透明感が出てきたら、だし/スープを100ml程度入れる。

 

 

 

4.お米が焦げないようにときどき混ぜ、スープが無くなってきたら再び100ml程度足す。

5.こうやって、「ときどきお米を混ぜて、スープが無くなってきたら足して炊く。」という作業を15~20分続ける。※ 好みのお米の硬さになったら次の工程に行くが、まだ硬かったら、お米が好みの硬さになるまで、水を少量ずつ足して炊き続ける。

6.しょう油と塩で味を整える。

 

 

 

7.玉子を溶き入れ、半分固まりかけたら火を止める。

8.お好みでトッピングをのせてお召し上がりください。


感想

・温ごはんより手間はかかるけど、美味しいです。
・やっぱり「だし」が美味しい!
・・・だけど、おかゆはだしがなくても美味しいですね?!

おわりに

関東の人と関西の人では塩味の感度がかなり違うと思います。
お好みの味にして、お召し上がりくださいね~。

Low-FODMAP【 Rice porridge/risotto/Zosui】English recipe

1. Cook Porridge from cooked rice (for one person)


ingredients

〇 Cooked rice:Lightly cooked rice in a bowl
※If you want a smooth porridge, you can wash it before cooking.

〇 1 egg

〇 Dashi soup(Soup stock) :150ml※

〇 soy sauce: About 1/3 ~ 2/3 teaspoon

○ Appropriate amount of salt


How to cook

  1. Put water in a pan and light the stove.
  2. When the water comes to a boil, add warm rice.
  3. Add about 1/3 to 2/3 teaspoon of soy sauce (or ayu fish sauce).
  4. If there is, add dried bonito powder or dried bonito.
  5. Adjust the taste with salt.
  6. Melt the egg and turn off the heat when it hardens.
  7. Please enjoy with toppings as you like.

* You choose favorite topping

・ Seaweed
・ Green onion
・ Sesame
・ “Katsuobushi powder” or “Katsuobushi” appropriate amount
・ Parmesan cheese

Eat with pickles  !

ingredients

〇 Rice 50g

〇 1 egg

〇 ※Dashi soup(Soup stock) about 300 ml

〇 Soy sauce, about 1/3 to 2/3 teaspoon

○ Salt, an appropriate amount

○ Cooking oil, appropriate amount


How to cook

1.Lightly wash the rice and drain it.

2.Put the oil in a frying pan or pan and fry.

3.When the rice becomes transparent, add about 100 ml of Dashi soup.

 

 

 

4. Mix occasionally so that the rice does not burn.
When the soup is low, add about 100 ml again.

5.In this way, continue the work of “sometimes mixing rice and adding it when the soup runs out” for about 15 to 20 minutes. * When the rice has the desired hardness, go to the next step, but if it is still hard, add water little by little and continue cooking until the rice has the desired hardness.

6.Adjust the taste with soy sauce and salt.

 

 

 

7. Add the beaten egg and turn off the heat when it is half solidified.

8. Please enjoy with toppings as you like.

※About Dashi soup(Soup stock)

Dear overseas friends,

Do stores sell Dashi soup (Soup stock) that can be used in low-FODMAP diets in your country?

I took the dashi stock with dried bonito flakes.

There are other low-FODMAP ingredients such as dried bonito that give you a delicious soup stock.

For example, chicken or scallops, small fish, fish, chirimen-jako, shrimp, crabs, shellfish, tomatoes, mix etc.

If you don’t have dried bonito in your country, take the Dashi soup (Soup stock) with those ingredients.
